Smoked Turkey Herb Pinwheels (Printable Version)

Flavorful tortilla spirals filled with herbed cream cheese, turkey, spinach and cheddar - ready in just 15 minutes!

# Ingredients:

→ Fresh Herb Cream Cheese

01 - 8 ounces Neufchatel Cheese, softened (cream cheese may be substituted)
02 - ¼ cup Fresh Basil Leaves, chopped
03 - 2 Scallions - green portion only, sliced
04 - ¼ teaspoon Red Pepper Flakes
05 - Kosher Salt, to taste
06 - Freshly ground Black Pepper, to taste

→ Pinwheels

07 - 1 large (9-inch) Flour Tortilla (regular or gluten-free)
08 - 1/6-1/4 of the Fresh Herb Cream Cheese mixture
09 - 3 slices Smoked Turkey (packaged)
10 - ¼ cup fresh Baby Spinach leaves with stems removed (about 20 leaves)
11 - 1-2 tablespoons grated Cheddar Cheese

# Steps to Follow:

01 - Place the Neufchatel cheese, basil, scallion greens and red pepper flakes in the food processor and process until fully pureed. Season with salt and pepper to taste.
02 - Cover tortilla with a damp paper towel and microwave for 15 seconds to make it more pliable.
03 - Spread ¼ to ⅙ of the fresh herb cream cheese onto one side of the tortilla, covering the entire surface but leaving a ½ inch border around the edge to prevent ingredients from spilling out.
04 - Place the spinach leaves evenly over the herb cream cheese, followed by turkey slices and finally the grated cheese.
05 - Gently roll up the tortilla with all ingredients to make a tight cylinder. Using a sharp knife, slice the roll into ¾ inch pieces to create pinwheels.
06 - Secure the outer edge of each pinwheel with decorative picks or toothpicks before serving.

# Additional Notes:

01 - To make a large batch (32 pinwheels): Use 4 large flour tortillas, the entire batch of herb cream cheese, 12 slices of turkey, 1 cup baby spinach, and 1/4 - 1/2 cup grated cheese.
02 - Pinwheels are best eaten when freshly made. Store leftovers in an airtight container with a damp paper towel on top to prevent the tortillas from drying out, especially when using gluten-free tortillas. Refrigerate for up to 1-2 days.
