Thick Chocolate Protein Pudding (Printable Version)

Velvety chocolate pudding with a boost of protein. Silky, creamy, and amazingly satisfying for chocolate lovers.

# Ingredients:

01 - 12 oz soft tofu
02 - 1 tbsp cocoa powder or chocolate protein powder
03 - 4 - 6 oz chocolate chips or broken up chocolate
04 - 1/8 tsp salt
05 - 2 - 3 tbsp sweetener of choice
06 - 1/2 cup peanut butter (optional)
07 - 1/4 tsp instant coffee (optional)

# Steps to Follow:

01 - Carefully melt the chocolate, either on the stovetop or in the microwave.
02 - Drain the tofu and let it come to room temperature.
03 - Combine all ingredients in a blender or food processor until smooth.
04 - Pour the mixture into ramekins, refrigerate until firm, and store leftovers in the refrigerator for up to five days.

# Additional Notes:

01 - For a sugar-free option, use sugar-free chocolate chips.
