In a small pot over medium heat, combine mashed bananas, sweetener, optional ingredients, and 1 cup of the milk of choice.

Whisk the remaining 1/4 cup of milk with the cornstarch until fully combined.

Once the banana mixture is warm, whisk in the cornstarch mixture. Cook on low heat, whisking occasionally, until thickened.

Turn off heat and stir in vanilla extract. For a smoother texture, use a hand blender if desired.

Serve pudding hot or cold. If not eating right away, let cool, then refrigerate. Pudding will thicken considerably in the fridge.
