Vegan Banana Pudding Easy (Printable Version)

Smooth dairy-free banana dessert with ripe bananas. Quick prep, naturally sweet, rich and customizable flavors.

# Ingredients:

01 - 2 ripe bananas, mashed
02 - 1 1/4 cups milk of choice
03 - Sweetener of choice, such as 1 tbsp pure maple syrup or sugar, or pinch stevia
04 - 1 1/2 tbsp cornstarch or arrowroot
05 - 1/4 tsp pure vanilla extract
06 - Optional: 1/8 tsp turmeric for color
07 - Optional: 1 tbsp vegan butter or coconut butter, for richer taste

# Steps to Follow:

01 - In a small pot over medium heat, combine mashed bananas, sweetener, optional ingredients, and 1 cup of the milk of choice.
02 - Whisk the remaining 1/4 cup of milk with the cornstarch until fully combined.
03 - Once the banana mixture is warm, whisk in the cornstarch mixture. Cook on low heat, whisking occasionally, until thickened.
04 - Turn off heat and stir in vanilla extract. For a smoother texture, use a hand blender if desired.
05 - Serve pudding hot or cold. If not eating right away, let cool, then refrigerate. Pudding will thicken considerably in the fridge.

01 - You can add 2-3 tbsp of peanut butter for a peanut butter banana pudding variation.
