Sopapilla Cheesecake Crescent Bars (Printable Version)

# Ingredients:

→ Dough

01 - 16 oz refrigerated crescent rolls (2 cans)

→ Filling

02 - 24 oz cream cheese (or vegan cream cheese)
03 - 1 3/4 cup plain yogurt, sour cream, or coconut cream
04 - 1 1/2 tsp pure vanilla extract
05 - 3/4 cup sweetener of choice (e.g., sugar or erythritol)
06 - 2 1/2 tbsp cornstarch or 5 tbsp almond flour

→ Topping

07 - 3 tbsp melted butter or coconut oil
08 - 1 tsp cinnamon
09 - 1/3 cup sugar or granulated erythritol

# Steps to Follow:

01 - Roll out the crescent dough. Place one sheet on the bottom of a 9x13 baking pan.
02 - Preheat the oven to 350°F (175°C). Using a food processor or hand mixer, blend the cream cheese, yogurt, cornstarch, vanilla, and sweetener until completely smooth. Spread the mixture evenly into the pan over the prepared dough.
03 - Carefully place the remaining crescent roll sheet on top of the filling. If the sheet falls apart, press it back together as much as you can.
04 - Spread the melted butter or coconut oil on top of the dough. Sprinkle the cinnamon sugar mixture evenly over the surface.
05 - Bake for 25 minutes. Without opening the oven, turn off the heat and let the bars sit in the closed oven for an additional 10 minutes. Let cool completely before cutting. For best results, refrigerate for a few hours or loosely cover with a towel and leave overnight to allow the bars to firm up.
