# Ingredients:

→ Cookie Base

01 - 1 cup unsalted butter, melted and cooled
02 - 1 ¼ cups granulated sugar
03 - ¼ cup packed brown sugar
04 - 2 teaspoons vanilla extract
05 - 1 whole egg plus 1 egg yolk

→ Dry Ingredients

06 - 1 ½ cups cake flour
07 - 1 ½ cups all-purpose flour
08 - ¾ teaspoon kosher salt
09 - ½ teaspoon baking soda

→ Decoration

10 - Decorator's sugar for rolling

# Steps to Follow:

01 - Using a stand mixer, combine the melted butter with granulated and brown sugars on medium-low speed until the mixture comes together smoothly.
02 - Mix in the egg, egg yolk, and vanilla extract until fully incorporated.
03 - In a separate bowl, whisk together cake flour, all-purpose flour, kosher salt, and baking soda.
04 - Add the dry ingredients to the butter mixture and mix just until combined. Do not overmix, especially if you want a chewy texture.
05 - Shape the dough into 24 golf ball-sized portions and roll each in decorator's sugar. Place on a lined baking sheet and freeze until completely firm.
06 - Preheat oven to 375°F (190°C). Arrange 12 frozen cookie balls per sheet, spacing about 1½ inches apart. Bake for 10-12 minutes or until the bottoms are light golden while tops remain pale and puffy.
07 - Remove from oven and allow cookies to cool completely to room temperature to achieve the perfect soft, chewy consistency.
