Whisk mashed banana, water, vanilla extract, vinegar, and oil or nut butter in a large bowl. Let sit for 10 minutes.

Preheat oven to 350°F (175°C) and line a muffin tin with liners.

In a separate bowl, mix flour, salt, baking soda, baking powder, sugar, and optional cinnamon.

Pour dry ingredients into the wet ingredients and stir gently until just combined.

Scoop mixture evenly into the prepared muffin liners.

Bake on the middle rack for 19-20 minutes, or until muffins have domed and a toothpick inserted into the center comes out mostly clean.
