Soft Moist Banana Muffins (Printable Version)

Soft, fluffy banana muffins make a wholesome breakfast or snack using ripe bananas and simple ingredients.

# Ingredients:

01 - 1 cup mashed banana
02 - 2 tbsp water
03 - 2 tsp pure vanilla extract
04 - 2 tsp white or cider vinegar
05 - 3 tbsp oil or nut butter, or 3 tbsp mashed banana for fat-free option

→ Dry Ingredients

06 - 1 cup spelt, white, or oat flour
07 - 1/2 tsp salt
08 - 1/2 tsp baking soda
09 - 1/2 tsp baking powder
10 - 1/3 cup sugar (unrefined if desired)
11 - 1/2 tsp cinnamon (optional)

# Steps to Follow:

01 - Whisk mashed banana, water, vanilla extract, vinegar, and oil or nut butter in a large bowl. Let sit for 10 minutes.
02 - Preheat oven to 350°F (175°C) and line a muffin tin with liners.
03 - In a separate bowl, mix flour, salt, baking soda, baking powder, sugar, and optional cinnamon.
04 - Pour dry ingredients into the wet ingredients and stir gently until just combined.
05 - Scoop mixture evenly into the prepared muffin liners.
06 - Bake on the middle rack for 19-20 minutes, or until muffins have domed and a toothpick inserted into the center comes out mostly clean.
07 - Allow muffins to cool completely. Optionally, loosely cover overnight for better liner separation and enhanced flavor and texture.
