Shrimp Scampi Skillet (Printable Version)

# Ingredients:

01 - ½ pound large shrimp, shelled and deveined with tails intact
02 - 5 tablespoons cold unsalted butter
03 - ⅓ cup olive oil
04 - ⅓ cup white wine
05 - 1 tablespoon minced garlic

→ Seasonings

06 - 1 tablespoon finely chopped fresh parsley, divided
07 - ½ teaspoon red pepper flakes (optional)
08 - 1 lemon, for zest and juice
09 - Kosher salt to taste
10 - Ground black pepper to taste

# Steps to Follow:

01 - Season shrimp with salt and black pepper.
02 - In a heated skillet, shallow fry seasoned shrimp for 1 to 2 minutes on each side. Do not overcook. Remove shrimp and set aside.
03 - Remove olive oil from the skillet. Pour in white wine and lemon juice, then simmer for 2 minutes. Add garlic and continue to simmer, stirring occasionally.
04 - Once the white wine-lemon juice mixture has reduced by half, add cold butter. Stir until smooth and creamy.
05 - Add half the fresh parsley, shrimp, and red pepper flakes to the sauce. Season with salt and black pepper as desired. Turn shrimp after 30 seconds and turn off heat once shrimp is heated through.
06 - Transfer to a plate. Garnish with lemon zest and remaining fresh parsley. Serve with toast.

01 - Cook shrimp in batches to avoid overcrowding the skillet.
02 - Shrimp is done when it turns opaque with a white-pink/orange color.
03 - Zest the lemon before extracting its juice.
