Preheat oven to 350°F (175°C). Line an 18 x 13-inch baking sheet with parchment paper.

In a large bowl, combine eggs and sugar. Stir in oil and vanilla extract until well mixed.

Incorporate flour and baking powder into the wet mixture, stirring thoroughly.

Fold in nuts and chocolate chips. If making the Earl Grey version, add tea leaves and apricot pieces to half the dough. For the traditional version, you may add cinnamon chips. Note that the dough will be slightly sticky.

Divide dough into 4 equal portions. Shape each portion into a loaf approximately 8-10 inches long and 4 inches wide. Place loaves on the prepared baking sheet, leaving space between them.

Bake loaves for 45 minutes until lightly golden and firm.

Remove loaves from oven. While still warm, slice each loaf into approximately 12 equal pieces. Coat each slice in the appropriate sugar mixture (cinnamon sugar for traditional version, Earl Grey sugar for tea version).

Return slices to baking sheet, placing them cut side down. Bake for 5 minutes, then flip and bake the other side for an additional 5 minutes until crisp.

Allow to cool completely before storing in an airtight container.
