Hot Honey Chicken Salad (Printable Version)

# Ingredients:

→ For the hot honey

01 - 2 tablespoons vegetable oil
02 - 1 tablespoon red pepper flakes
03 - 1 garlic clove, minced
04 - ½ cup honey
05 - ½ tablespoon apple cider vinegar

→ For the chicken

06 - 2 chicken breasts, cut into fillets
07 - Salt and pepper, to taste
08 - 4 cups cornflakes, crumbled
09 - ¼ cup all-purpose flour
10 - ¼ cup Parmesan cheese, shredded
11 - 2 teaspoons garlic powder
12 - 1 teaspoon smoked paprika
13 - 2 large eggs, beaten
14 - Avocado oil spray (optional)

→ For the Salad

15 - 4 cups lettuce, shredded
16 - 1 cup cherry tomatoes, sliced
17 - ½ cucumber, sliced
18 - ¼ cup blue cheese, crumbled
19 - ¼ cup Ranch dressing

# Steps to Follow:

01 - Heat the oil in a skillet over medium heat. Add the red pepper flakes and minced garlic, cooking for about 2 minutes. Ensure the oil isn't too hot to prevent burning the garlic and pepper flakes.
02 - Once the oil develops a red tint, remove from heat and cool for 2 minutes. Stir in honey and apple cider vinegar until well combined. If mixture is too thick, gently reheat to improve consistency.
03 - Preheat oven to 180°C (350°F). Line a baking dish with parchment paper.
04 - In a bowl, combine the crumbled cornflakes, flour, Parmesan cheese, garlic powder, and smoked paprika.
05 - Season chicken fillets with salt and pepper. Dip each piece in beaten eggs, then thoroughly coat in the cornflake mixture.
06 - Lightly spray the coated chicken with avocado oil and transfer to the prepared baking dish. Bake for 15-20 minutes until golden brown and crisp.
07 - Remove chicken from oven and drizzle with hot honey. Allow to cool slightly before slicing into strips.
08 - Layer shredded lettuce, cherry tomatoes, cucumber slices, and crumbled blue cheese in serving bowls. Top with the honey-glazed chicken strips.
09 - Drizzle with ranch dressing or preferred alternative just before serving.
