# Ingredients:

01 - 15 oz pumpkin puree
02 - 13.5 oz canned coconut milk
03 - 1/4 cup rolled oats or 3 tbsp flour of choice
04 - 2 tbsp ground flax or 1 egg
05 - 1/2 cup coconut sugar or brown sugar
06 - 2 tsp cinnamon
07 - 1 tsp pumpkin pie spice
08 - 1/2 tsp salt
09 - 1 tbsp pure vanilla extract
10 - 1 pie crust

# Steps to Follow:

01 - Prepare your pie crust in a 9-inch pan, then set it aside.
02 - Preheat the oven to 400°F.
03 - If using oats, blend them first into a fine flour consistency using a blender or food processor.
04 - Stir or blend all pie ingredients together until smooth.
05 - Pour the pumpkin filling into the crust.
06 - Bake the pie for 27 minutes on the center rack of the oven. Its texture should still look underdone after this time.
07 - Let the pie cool, then refrigerate it uncovered for at least 5 hours to thicken and set.
