# Ingredients:

01 - 1 1/2 cups Greek yogurt, vegan if desired
02 - 1/2 cup cream cheese, or soft or firm tofu
03 - 1/4 tsp salt, just over level
04 - 1 1/2 tsp pure vanilla extract
05 - 1/2 tbsp lemon juice
06 - 1/2 cup pure maple syrup or agave (or 2/3 cup sugar or xylitol)
07 - 1 tbsp cornstarch or arrowroot
08 - crust of choice

# Steps to Follow:

01 - Preheat oven to 350 F. Combine all ingredients until completely smooth using a blender or food processor for best results.
02 - Pour the mixture into a prepared crust. Bake for 50 minutes, then remove from the oven. It should still appear slightly underdone.
03 - Allow to cool for an hour before transferring the cake, uncovered, to the refrigerator. Let it set for at least 8 hours to firm up and enhance flavor.
