Stir in Greek yogurt using a spatula until a dough forms. Then knead the mixture together with your hands until fully combined.

Lightly flour a work surface. Divide the dough into 4 equal portions. Roll each into a ball, slightly flatten, and create a hole in the center using a spoon handle or by rolling into a log and connecting the ends.

Whisk the egg and brush each bagel thoroughly with the egg wash. Sprinkle with your preferred toppings.
