Lemon Chicken Orzo Soup (Printable Version)

# Ingredients:

01 - 2 carrots, chopped
02 - 2 stalks celery, chopped
03 - 1/2 small onion, chopped

04 - 2 oven baked chicken breasts, chopped

05 - 4 sprigs thyme
06 - 8 sprigs parsley
07 - Juice and zest of one lemon

→ Liquids

08 - 6 cups chicken broth

→ Pasta

09 - 3/4-1 cup orzo pasta

# Steps to Follow:

01 - Drizzle a little oil into a pot and add onions, celery, and carrots. Cook on medium heat for about 3-5 minutes until vegetables are tender.
02 - Add the chicken, thyme, parsley, and chicken broth to the pot.
03 - Cover the soup and bring to a boil, simmering for about 10-15 minutes.
04 - Use a spoon to remove the herb sprigs, then add the orzo pasta and lemon zest.
05 - Continue cooking until pasta is fully cooked, about 7 minutes.
06 - Stir in the fresh lemon juice and garnish with chopped parsley before serving.

# Additional Notes:

01 - This soup can be made ahead and stored in the refrigerator for up to 3 days. The orzo may absorb more broth during storage, so you might need to add additional broth when reheating.
