Creamy Cauliflower Soup Healthy (Printable Version)

# Ingredients:

01 - 6 cups cauliflower florets (about 1 head)
02 - 2 shallots or 1/4 cup onion, chopped
03 - 2 tbsp minced garlic
04 - 1 tsp salt
05 - 1/2 tsp onion powder
06 - Pinch of nutmeg (optional)
07 - 4 cups milk of choice
08 - 3 tbsp butter or oil (omit for fat-free)
09 - 1 1/2 cups shredded cheese (optional)

# Steps to Follow:

01 - Add all ingredients except the cheese to a medium pot. Bring to a full boil over high heat.
02 - Once boiling, cook on medium heat—stirring occasionally—for 10 minutes or until the cauliflower is soft.
03 - If using cheese, stir it in until melted.
04 - Use a blender or immersion blender to puree the soup until creamy.
05 - Garnish if desired and serve immediately. Leftovers can be refrigerated or frozen for another day.
