Roll out the pizza dough on a floured surface (any flour works, including coconut flour). If the dough is too sticky, add more flour gradually until it is manageable. Roll the dough very thinly, just under 1/4 inch.

Spread butter, coconut oil, or applesauce evenly over the surface of the dough. Sprinkle the sugar or sugar-free substitute and ground cinnamon evenly across the dough.

Cut the dough into long strips and roll each strip up as tightly as possible. Arrange the rolled strips in a greased baking pan.

Preheat the oven to 400°F (200°C). Bake the rolls for 20 minutes, or until golden brown.
