Combine mayonnaise, ketchup, paprika, Cajun seasoning, and Worcestershire sauce in a bowl. Mix thoroughly, cover and refrigerate until serving time.

Slice sweet onions into ½-inch thick rings and separate them. Discard the small inner rings that are too small for coating.

In one bowl, combine flour, salt, garlic powder, onion powder, smoked paprika, and black pepper. In a separate bowl, whisk buttermilk and eggs together until well blended.

Pour oil to a depth of 2-2½ inches in a Dutch oven or heavy pan. Heat to 165-175°C (325-350°F).

Dip each onion ring first in the flour mixture, then in the buttermilk-egg mixture (allowing excess to drip off), then again in the flour mixture for a complete coating. Place coated rings on a baking rack.

Fry 5-7 onion rings at a time for 2-3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towel-lined baking sheet.

Serve onion rings immediately while hot with the chilled dipping sauce.
