# Ingredients:

01 - ¾ cup mayonnaise
02 - ¼ cup ketchup

06 - 2 large sweet onions
07 - 2 eggs
08 - 1 ½ cups buttermilk
09 - 2 cups all-purpose flour
10 - 1 ½ teaspoons salt
11 - 1 teaspoon garlic powder
12 - 1 teaspoon onion powder
13 - 1 teaspoon smoked paprika
14 - ½ teaspoon black pepper
15 - Oil for frying

# Steps to Follow:

01 - Combine mayonnaise, ketchup, paprika, Cajun seasoning, and Worcestershire sauce in a bowl. Mix thoroughly, cover and refrigerate until serving time.
02 - Slice sweet onions into ½-inch thick rings and separate them. Discard the small inner rings that are too small for coating.
03 - In one bowl, combine flour, salt, garlic powder, onion powder, smoked paprika, and black pepper. In a separate bowl, whisk buttermilk and eggs together until well blended.
04 - Pour oil to a depth of 2-2½ inches in a Dutch oven or heavy pan. Heat to 165-175°C (325-350°F).
05 - Dip each onion ring first in the flour mixture, then in the buttermilk-egg mixture (allowing excess to drip off), then again in the flour mixture for a complete coating. Place coated rings on a baking rack.
06 - Fry 5-7 onion rings at a time for 2-3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towel-lined baking sheet.
07 - Serve onion rings immediately while hot with the chilled dipping sauce.
