Chicken Teriyaki Pineapple Bowl (Printable Version)

# Ingredients:

→ For the rice

01 - 1 ½ cup sushi rice, cooked
02 - 1 tbsp rice vinegar
03 - ½ tsp salt
04 - 1 tsp sugar
05 - 1 ½ tbsp water

→ For the teriyaki chicken

06 - 1 lb chicken fillet
07 - ⅓ cup soy sauce
08 - 1 tbsp rice vinegar
09 - 4 tbsp brown sugar
10 - 1 tsp sesame oil
11 - 3 tsp olive oil
12 - 4 tbsp water
13 - 1 ½ tsp garlic, minced
14 - 1 ½ tsp ginger
15 - 3 tsp cornstarch

→ For the dressing

16 - ¼ cup mayonnaise
17 - 1 tbsp rice vinegar
18 - 1 tbsp lime juice
19 - 1 tsp sesame oil
20 - ½ tbsp sriracha
21 - 1 tbsp water

→ Toppings

22 - ½ cup pineapple chunks
23 - ½ cup cucumber, sliced
24 - ½ cup carrot, sliced
25 - ½ cup pickled red onion
26 - ½ cup edamame
27 - Green onions for garnish
28 - Sesame seeds for garnish

# Steps to Follow:

01 - Gather all ingredients. Preheat the oven to 350°F and line baking dish with foil.
02 - Combine rice vinegar, salt, sugar, and water in a bowl. Mix thoroughly with the cooked sushi rice and set aside.
03 - Combine all teriyaki sauce ingredients in a pan. Stir and bring to a simmer until the sauce thickens.
04 - Rinse chicken and pat dry. Slice into uniform cubes and coat thoroughly with the teriyaki sauce.
05 - Arrange the teriyaki-coated chicken cubes on the prepared baking dish and bake in preheated oven for 15-18 minutes.
06 - While chicken bakes, whisk together all dressing ingredients in a small bowl and set aside.
07 - Layer the seasoned rice as base, then add the teriyaki chicken, pineapple chunks, cucumber slices, carrot slices, pickled onions, and edamame.
08 - Drizzle with the prepared dressing, then garnish with green onions and sesame seeds.
