Preheat oven to 180°C (350°F). Lightly grease a 30 cm (12-inch) springform pan and wrap the outside with foil to prevent leakage.

Combine sliced apples with sugar, cinnamon, and lemon juice in a bowl. Allow to macerate while preparing other components.

Mix eggs, oil, potato flour, sugar, matzo meal, and salt until well combined.

Spread half of the cake batter evenly across the bottom of the prepared springform pan.

Arrange the apple slices with their juices over the batter layer.

Carefully spread the remaining cake batter over the apple layer.

Combine chopped nuts or matzo meal, cinnamon, sugar, and butter. Mix with fingertips to create clumps of streusel.

Sprinkle the streusel topping evenly over the cake surface.

Bake for approximately 75 minutes until golden brown and a tester inserted in the center comes out clean.

Allow cake to cool completely before removing the springform ring.

In a small saucepan, combine butter, brown sugar, and milk. Bring to a boil while stirring constantly. Once boiling, continue to cook for 2½ minutes.

Remove from heat and stir in vanilla extract. Allow to cool to room temperature. For a thicker consistency, add a few tablespoons of powdered sugar.

Pour caramel sauce over the cake just before serving. Note that the sauce will remain soft for approximately 4 hours before hardening.
