Strawberry Oatmeal Bars (Printable Version)

# Ingredients:

01 - 1 cup old-fashioned rolled oats
02 - 3/4 cup white whole-wheat flour
03 - 1/3 cup brown sugar
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon salt
06 - 6 tablespoons butter, melted
07 - 2 cups diced fresh strawberries
08 - 1 tablespoon granulated sugar
09 - 1 teaspoon cornstarch
10 - 1 teaspoon freshly squeezed lemon juice

11 - 1/2 cup powdered sugar, sifted
12 - 1/2 teaspoon pure vanilla extract
13 - 1 tablespoon milk

# Steps to Follow:

01 - Preheat oven to 375°F. Line an 8×8-inch baking pan with parchment paper, leaving overhang on the edges for easy removal.
02 - In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt until thoroughly mixed.
03 - Stir the melted butter into the oatmeal mixture until it forms clumps. Reserve 1/2 cup of the crumble mixture for topping.
04 - Press the remaining oat mixture into an even layer in the bottom of the prepared pan.
05 - In a small bowl, toss strawberries, granulated sugar, cornstarch, and lemon juice together until evenly coated.
06 - Spread the strawberry mixture over the oat base, then sprinkle the reserved crumbs over the fruit filling. Note that the crumbs won't completely cover the fruit.
07 - Bake the bars for 35-45 minutes, or until the topping is light golden brown and fragrant.
08 - Allow the bars to cool in the pan until they reach room temperature.
09 - Whisk powdered sugar, vanilla, and milk together until smooth and well combined.
10 - Drizzle glaze over the cooled bars, then cut into squares to serve.

01 - Oats: Quick oats have not been tested in this recipe and may yield different results.
02 - Flour: All-purpose flour can be substituted in equal amount for the white whole-wheat flour.
03 - Strawberries: Frozen strawberries can be used in place of fresh. Increase baking time slightly and consider adding more cornstarch if the filling appears too thin.
