# Ingredients:

01 - 340g Green Beans, fresh or frozen
02 - Water to cover beans
03 - 1 Teaspoon Salt

04 - 2 Eggs
05 - 240ml Heavy or Table Cream
06 - 1 Tablespoon Dijon Mustard
07 - ½ Teaspoon Salt
08 - ½ Teaspoon Ground Black Pepper
09 - 1 Tablespoon Italian Seasoning or Oregano
10 - 120g Grated Cheese (Cheddar and Parmesan blend suggested)
11 - 1 Tablespoon Olive Oil

# Steps to Follow:

01 - Rinse fresh green beans and trim ends. If using frozen beans, thaw them completely.
02 - Bring a pot of salted water to boil. Add green beans and blanch for about 5 minutes.
03 - Transfer blanched beans to ice water to halt cooking and preserve their vibrant green color. Set aside.
04 - Preheat oven to 200°C (400°F).
05 - In a mixing bowl, combine eggs, cream, dijon mustard, salt, black pepper, Italian seasoning, and half of the grated cheese.
06 - Arrange green beans in a 9 x 13" rectangular baking dish and pour the prepared filling evenly over the beans.
07 - Sprinkle the remaining cheese over the top and drizzle with olive oil.
08 - Bake at 200°C (400°F) for 20-25 minutes until golden brown on top.
09 - Serve hot directly from the baking dish.
