Keto Lemon Bars Creamy Easy (Printable Version)

Lemon bars with a creamy center and nutty almond base. Tangy, low-carb, and melt-in-your-mouth delicious.

# Ingredients:

→ Filling

01 - 12 oz cream cheese
02 - 1 cup yogurt
03 - 2 tbsp lemon juice
04 - 2 tsp lemon zest
05 - 1/2 cup powdered xylitol or erythritol, or powdered sugar for non-keto recipes
06 - 3 1/2 tbsp almond flour or 1 tbsp cornstarch
07 - Optional: 1/8 tsp turmeric or a few drops of yellow food coloring for color

→ Crust (optional)

08 - 1 1/2 cups almond flour
09 - 4 tbsp melted butter or coconut oil

# Steps to Follow:

01 - Preheat the oven to 350°F (175°C).
02 - Combine the crust ingredients, if using. Press the crust mixture into a parchment-lined 8x8 baking pan.
03 - Combine the remaining ingredients in a blender or food processor until smooth. Avoid over-beating to prevent cracking during baking.
04 - Pour the filling over the crust. Bake in the preheated oven for 25 minutes. Without opening the oven door, turn off the heat and let the bars rest inside for 8 additional minutes.
05 - Remove the bars from the oven while still undercooked. Let them cool completely, then refrigerate for a few hours until firm.
06 - Leftover bars can be refrigerated or frozen for later consumption.
