Preheat the oven to 350°F (175°C).

Combine the crust ingredients, if using. Press the crust mixture into a parchment-lined 8x8 baking pan.

Combine the remaining ingredients in a blender or food processor until smooth. Avoid over-beating to prevent cracking during baking.

Pour the filling over the crust. Bake in the preheated oven for 25 minutes. Without opening the oven door, turn off the heat and let the bars rest inside for 8 additional minutes.

Remove the bars from the oven while still undercooked. Let them cool completely, then refrigerate for a few hours until firm.
