Homemade Date Paste (Printable Version)

A smooth, caramel-like date and miso blend that serves as a natural sweetener for baking with subtle, rich flavor notes.

# Ingredients:

01 - 2 cups Medjool dates, lightly packed, pits removed
02 - 1 cup reserved water from soaking the dates
03 - 1 tablespoon white miso paste

# Steps to Follow:

01 - Bring water to a boil in a kettle or pot.
02 - Pour boiling water over the dates, just enough to cover them completely. Allow to soak for one hour to soften.
03 - Reserve 1 cup of the soaking liquid, then drain the dates.
04 - Combine the soaked dates in a blender or food processor with the miso paste and ¾ cup of the reserved liquid. Blend until smooth, scraping down the sides as needed.
05 - Add more reserved liquid gradually as needed until reaching desired smooth consistency.
06 - Transfer to a clean jar for storage and use.
