Bring water to a boil in a kettle or pot.

Pour boiling water over the dates, just enough to cover them completely. Allow to soak for one hour to soften.

Reserve 1 cup of the soaking liquid, then drain the dates.

Combine the soaked dates in a blender or food processor with the miso paste and ¾ cup of the reserved liquid. Blend until smooth, scraping down the sides as needed.

Add more reserved liquid gradually as needed until reaching desired smooth consistency.

Transfer to a clean jar for storage and use.
