English Muffin Breakfast Pizza (Printable Version)

Sausage, scrambled eggs, and cheddar on toasted English muffins topped with classic sawmill gravy.

# Ingredients:

01 - 1 package of English muffins
02 - 8 eggs
03 - 1 lb breakfast sausage
04 - 8 oz mild cheddar cheese, thinly sliced

→ Sawmill Gravy Ingredients

05 - 2 cups milk
06 - ¼ cup sausage drippings (add butter if insufficient drippings)
07 - ¼ cup flour
08 - ½ teaspoon salt, or to taste
09 - ¼ teaspoon pepper, or to taste

# Steps to Follow:

01 - In a cast iron pan, cook sausage until well done. Remove sausage and pour off all but ¼ cup of the drippings.
02 - Add flour to the reserved drippings in the skillet. Cook and stir over medium heat for 5 to 10 minutes until the mixture starts to turn golden.
03 - Slowly add milk to the roux, stirring constantly. Cook until the gravy boils and thickens.
04 - Lightly toast the English muffins while preparing the gravy.
05 - In a non-stick skillet, scramble the eggs. Optionally, add a small dash of milk for a fluffier texture.
06 - Preheat the oven broiler on high. Spread sawmill gravy on the open-faced toasted English muffins, then layer with scrambled eggs, a slice of cheddar cheese, and sausage.
07 - Broil the assembled pizzas until the cheese is bubbly and melted.
