Creamy Chicken Broccoli Soup (Printable Version)

# Ingredients:

→ Base

01 - 2 tablespoons butter
02 - 1 large onion, chopped
03 - 2 stalks celery, chopped
04 - 3 cloves garlic, minced
05 - 1 teaspoon dried thyme
06 - 1/3 cup flour

→ Liquids

07 - 2 cups whole milk or full fat oat milk
08 - 4 cups chicken broth

→ Vegetables & Protein

09 - 4 cups frozen broccoli
10 - 1/2 cup shredded carrots
11 - 2 cooked chicken breasts, chopped or shredded
12 - Salt and pepper to taste

# Steps to Follow:

01 - Heat butter in a dutch oven over medium heat. Add onion, celery, and garlic, cooking until softened, about 3-5 minutes.
02 - Stir in the dried thyme and cook for an additional minute to release its flavor.
03 - Add flour to the vegetables and stir to coat evenly.
04 - Pour in 1 cup of milk, stirring until flour is completely dissolved. Add remaining milk and chicken broth, then bring mixture to a boil.
05 - Reduce heat to medium-low. Add frozen broccoli and chicken breast, then simmer for 10-15 minutes until broccoli is tender.
06 - Season with salt and pepper to taste and serve hot.

01 - If using freshly shredded carrots, add them with the onions, garlic, and celery. If using frozen shredded carrots, add them when you add the frozen broccoli and chicken.
