Creamy Cauliflower Mashed Potatoes (Printable Version)

Velvety smooth cauliflower mash with buttery richness, ready in minutes. Perfect low-carb side dish with dairy-free options.

# Ingredients:

01 - 1 large head cauliflower (about 570 grams), cut into florets
02 - 2-5 tablespoons coconut milk or other dairy-free milk
03 - 1/4 cup butter (about 50 grams) or dairy-free alternative
04 - 2-3 tablespoons nutritional yeast
05 - 1 teaspoon garlic powder
06 - Salt and pepper to taste
07 - Fresh parsley for garnish (optional)

# Steps to Follow:

01 - Place cauliflower florets with about 240ml water in a large pot. Bring water to a boil and steam until the florets are fork tender, about 10 minutes.
02 - Remove cauliflower from heat and drain thoroughly.
03 - Transfer drained cauliflower to a food processor or blender. Add coconut milk, butter, nutritional yeast, and garlic powder.
04 - Blend or process until completely smooth and fluffy.
05 - Taste and adjust seasonings with additional salt and pepper as needed.
06 - Transfer to a serving dish and garnish with fresh parsley and a sprinkle of black pepper if desired.

# Additional Notes:

01 - If you're short on time, substitute the same weight of cauliflower rice instead of fresh cauliflower florets for quicker cooking.
02 - Steaming the cauliflower rather than boiling helps retain more nutrients while achieving the desired tender texture.
03 - Frozen florets can be used but may result in a less desirable final texture compared to fresh cauliflower.
